In Kibbutz Geshur, in the south of the Golan Heights, an olive vineyard of eight unique varieties was planted. The trees were designed for a mechanized harvest that allows harvesting at the right time, which maximally emphasizes the unique aroma of the variety.
This method also allows the quick arrival of the olives for processing in the vat house and prevents the formation of aftertastes, and an increase in acidity. The cold pressing preserves the aroma.
And observing the duration of the mixing prevents oxidation of the healthy ingredients found in the natural oil.
