Legumes or pod fruits are the edible part of the fruit or seed of a plant. The legumes are grown in industrialized agriculture, mainly for human consumption and as fodder. Due to their health properties there are those who grow them just for the sake of green fertilizer that improves the soil.
Legumes are a significant source of protein, dietary fiber, carbohydrates and dietary minerals. For example, 100 grams of cooked chickpeas contains 18 percent of the recommended daily intake of protein, 30 percent of dietary fiber, 43 percent of folic acid and 52 percent of manganese.
Like other plant-based foods, legumes contain no cholesterol and very little fat and sodium.
They are also an excellent source of resistant starch that is broken down by bacteria in the colon that produces short fatty acids that are energy for the cells in the body.
Common legumes include several main families: beans, peas, chickpeas, beans, lentils, soy.
